Ingredients

1 cup rolled oats

2 ripe bananas

2 eggs

1/2 tsp baking powder

1 tsp vanilla extract

1/2 tsp cinnamon

Small amount of olive/rapeseed oil for cooking

Method

  1. In a blender, combine the oats, bananas, eggs, baking powder, vanilla extract, and cinnamon. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease with a small amount of olive or rapeseed oil.
  3. Pour small amounts of batter onto the skillet to form pancakes.
  4. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  5. Serve with fresh fruit.
