Banana Oat Pancakes

Ingredients
1 cup rolled oats
2 ripe bananas
2 eggs
1/2 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon
Small amount of olive/rapeseed oil for cooking
Method
- In a blender, combine the oats, bananas, eggs, baking powder, vanilla extract, and cinnamon. Blend until smooth.
- Heat a non-stick skillet over medium heat and lightly grease with a small amount of olive or rapeseed oil.
- Pour small amounts of batter onto the skillet to form pancakes.
- Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
- Serve with fresh fruit.
